Vegan Peanut Butter Gelato
2 cups soymilk
1/4 cup brown sugar, maybe a little more
1/4 cup peanut butter (the real stuff, not the hydrogenated oil crap)
1 tsp vanilla

Mix well. Fire up the ice cream maker. Pour it in. Wait. Yum.

Makes 1 pint. (I halved the recipe tonight, because I knew I was gonna eat it all. Mmmf.)

Peanut butter stands in for dairy fat much better than most things do. Everybody's afraid of peanuts now which is a shame because most of us aren't allergic and they are yummy.

Unlike my tahini version (which makes a good base for a chocolate "ice cream") this recipe stands well on its own. You don't have to smother it in chocolate or extra sugar. You do have to like peanuts.

Well, yeah! But the operative phrase was "have to." Heh. And it is occasionally pleasant to be reminded of what something tastes like in the absence of chocolate. Um... if only so you can like it MORE when there is chocolate in it.

Does this really work? Without coconut milk or soy creamer? No thickener? No fruit? It seems too good to be true!

Yes, it really works really well. (; The peanut butter is key, you need some sort of fat - peanut butter, tahini, coconut milk...

Okay, so I did this today and even threw in an extra tablespoon of pb for good measure (never get too much of that stuff) and my ice cream machine (which sucks) jammed. I looked later and it said "soft serve ice cream recipes only" (always read the fine print). So I felt bad wasting the stuff because it was so good and stirred it in the freezer container thing for 30 minutes. Not fun. Tastes good, but definately not worth that kind of effort. Any suggestions on other ways to make it?

Get a regular freezer-insert ice cream maker. They are under $40.

OMG Sooo Good!

I just started making gelato in the past few weeks with vanilla soy yogurt and frozen berries. I don't own an ice cream maker, so I just mash up all the ingredients together and eat! Not too much makes it back into the freezer for leftovers. But any that does just needs a lil bit o time to mellow before re-eating.
Just made your PB gelato...with the vanilla soy yogurt instead of soymilk & vanilla. I am in heaven...didn't think PB could be any better!!!
My husband is not a fan of the REAL PB (if you can imagine such a thing!), so I decided to appease his desire for PB gelato and made him his own separate batch with skippy.
Try your recipe with frozen pitted cherries...I get the organic ones from Whole Foods Market. Heaven on a spoon!
